Because champagne has a higher acidity and is drier than prosecco. Creating a more balanced and refreshing drink, especially when mixed with sweet or aromatic ingredients.
Which champagne to use:
There are many champagnes and many spritzes. The best kind of champagne to use depends on the desired type of spritz, ranging from the bitter Campari and pomegranate spritz to sweeter orange and elderflower spritzes or more aromatic limoncello and Lillet variations.

60 ml Myspritz Traditional
30 ml soda water
